Eggplant Caponata

Sicilian Eggplant Appetizer


Ingredients

3 large eggplants

1 large red onion

3 Red Bell Peppers

1/2 cup olive oil

Method of Prep:

  1. Roast Eggplant, Red Onion, with salt, oregano & toss with olive oil for 1 hour at 400F

  2. Reserve for later


Ingredients:

6 Roma tomatoes

1 head of garlic, minced

1 Cup Sherry vinegar

1/2 cup dried mint

1 bunch of fresh parsley or 1/2 cup of dried parsley

S& P to taste


Method of Prep

  1. Sauté garlic with olive oil for 5-8 minutes on low heat, add Roma Tomatoes, with mint and cook for 30 minutes

  2. Add Sherry vinegar, fresh parsley, toss together with roasted vegetables

  3. Serve on FlavorFulz- Edible Spoons at Expo utilized Parmesan Crisp
