Rhode Island Women's Expo Pumpkin Chana Masala - Chickpea

Ingredients:

1 can pumpkin

1 can chickpeas

1# frozen spinach

1 tablespoon garlic powder

1 tablespoon onion powder

2 tablespoon Chana Masala Seasoning

1 tablespoon paprika

1 teaspoon cumin

1 teaspoon Caraway seed

1- 2 tablespoons Olive Oil

1 lime juice


Method of Prep:

  1. Large sauté pan heat on stove top with olive oil

  2. Add in seasonings to "toast" garlic powder, chana masala, paprika, cumin, caraway seeds

  3. Sauté spinach ( 8-10 minutes) in a separate pan with olive oil

  4. Sauté pumpkin 10 minutes in with olive oil, then add chickpeas and cook for 20 minutes together

  5. Then fold in spinach and add salt to taste, squeeze lime on as desired.

  6. Serve warm with side of naan bread

  7. Enjoy!
