Rhode Island Women's Expo Pumpkin Chana Masala - Chickapea

Ingredients:
1 can pumpkin
1 can chickapeas
1# frozen spinach
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoon Chana Masala Seasoning
1 tablespoon paprika
1 teaspoon cumin
1 teaspoon Caraway seed
1- 2 tablespoons Olive Oil
Method of Prep:
Large sauté pan heat on stove top with olive oil
Add in seasonings to "toast" garlic powder, chana masala, paprika, cumin, caraway seeds
Sauté spinach ( 8-10 minutes) in a separate pan with olive oil
Sauté pumpkin 10 minutes in with olive oil, then add chickapeas and cook for 20 minutes together
then fold in spinach and add salt to taste
Serve warm with side of naan bread
