3 Summer GO To Recipes
Combine all 3 and make a lovely sandwich!
Recipes:
Fava Beans
Ingredients
28 oz Fava Beans ( 1 frozen package)
3-4 cloves Garlic
4 oz Walnuts
2 heads Scallions
1 bunch Cilantro
3 oz Lemon Juice
3 oz Olive Oil
Salt to taste
Method of Prep:
Boil Frozen Fava Beans for 5- 7 minutes ( most often will rise to the top when done), In boiling water add stocks of scallions, garlic and garlic peel
In Food Processor, add beans, peeled garlic, walnuts, scallions, cilantro, lemon juice, olive oil and salt, and blend until desired consistency
Enjoy with bread on sandwich
Chickapea
Ingredients:
2 cans Chickpeas
2 oz Lemon juice
2 oz Olive Oil
2 cloves Garlic for inside, for boiling water 2 cloves with peels
1 tbsp Cumin or to taste
Salt to taste
Method of Prep:
Rinse canned beans, 3 times, may soak for 1-2 minutes ( Removes sodium)
Boil Beans with ½ of a whole lemon, and 3 garlic with peels on in the water
In Food Processor, Add beans, lemon juice, garlic, olive oil, Cumin and salt
Enjoy with vegetables
Shirazi Salad
2 Cucumber (¼ inch dice cubes)
1 Red Onion (¼ inch dice cubes)
10 small Tomato (¼ inch dice cubes)
½ cup Dry Mint
1 oz Olive Oil
Salt to taste
Method of Prep:
Wash vegetables
Cut up cucumbers, tomatoes and red onion
Mix vegetables with mint, olive oil and salt and enjoy
